When you’re happy with the baby’s hair, you have to save the lot for the baby to keep the chosen hairstyle, or they’ll be assigned a new, random hairstyle the next time you visit the lot. Like for accessories, you’ll need a mod that enables the “change appearance” menu for infants (such as the Insimenator or the Sim Blender - might be others as well). The hairs can also be changed through the “Change appearance” menu (including hair color, but remember to also change eyebrows). They are binned/familied into the proper hair colors.
